Oolong Koeksisters (deep fried bread) - A family favourite

In South Africa, there is a sweet pastry known as a “koeksister” (literally translated as “cake sister” and pronounced “cook-sister”). It is like sweet deep fried bread and is often enjoyed during Easter. We have added a touch of oolong to so you won’t feel so bloated as stuffing your face with them! Eat them when they are piping hot!

Ingredients
- 1 lb flour
- 1 tbsp baking powder (better with fresh yeast)
- a pinch of salt
- 2 oz butter
- 2 eggs
- 1/8 pint milk
- Tie Guan Yin oolong (or another very good oolong), dry leaves ground as finely as possible
- oil for deep frying
- enough treacle to dip koeksisters
Directions
- Sieve the flour, baking powder and salt together and rub in butter well.
- Beat eggs, then add the milk and tea to form into a dough.
- Roll out 3/4 inch thick log and cut into 2 inches squares.
- In a deep pan or saucepan, add oil and when it’s hot, drop 3 to 4 koeksister at a time into the oil. When they are cooked, they will pop up to the surface. Then turn them over quickly and immediately dip them into a bowl of cold syrup.
- Sprinkle coconut over koeksister before serving.
